It happens every year. The weather warms up and it’s picnic season. Who doesn’t love a good picnic, right? Then you start planning the food and realize, you don’t want to be cooped up in a kitchen with a hot oven baking away when the great outdoors is waiting for you to bask in its sunny beauty. You can grill your lunch or dinner, and even salads don’t require you to turn up the heat. But, cakes and pies are labor intensive and need a good amount of time in an oven, with you peeking in from time to time to make sure they’re not getting burned.
In this video, Everyday Food maven Sarah Carey offers up a perfect summer “cake” that requires no baking at all and comes together in minutes. If you can’t stand the heat, turn the oven off.
1 1/2 pounds raspberries (5 cups)
3/4 cup confectioners’ sugar
1/4 cup fresh orange juice (from 1 large orange)
10 ounces mascarpone cheese (1 1/3 cups)
1 1/4 cups cold heavy cream
1/2 teaspoon pure vanilla extract
20 to 24 ladyfingers (from a 7-ounce package), broken into 1-inch pieces
3/4 pound blueberries (2 1/2 cups)
